2022 Wilyabrup Cabernet Sauvignon


This vineyard has a clay component in its loam over ironstone gravel profile. Wild fermented in tank over a period of 16 days – long & slow then into seasoned barriques and puncheon for 14 months maturation. Bottled without fining or filtering. Plush, fuller with structured fruit tannins.

“It’s an interesting style of Cabernet, and a bit different with it’s intense perfume of rose oil and mint, there’s blue and red fruit, bay leaf, and some subtle biscuitty oak. It’s medium-bodied, boysenberry, raspberry and blueberry, again that rosy thing, with rich fleshy tannin, some tobacco and black olive on a finish of good length. Juicy and individual. I like it.”
