Hand-picked by us over 2 days in late April 2022. One day’s pick was whole bunch fermented, the other destemmed both were foot trod and indigenous yeast allowed to do their work. The results were gently basket pressed into a single aged French Hogshead and matured with love until bottling without fining or filtration.
