2023 Wilyabrup Cabernet Franc


Hand picked from sandy loam over gravel. The fruit was chilled over night then de-stemmed into an open fermenter, foot trod for a cold soak until wild ferment kicked off. Hand plunged over 10 days and  basket pressed into old puncheons for eight months of ageing. Bottled without fining or filtering.  This Franc is fragrant, bouncy & juicy.

“Wilyabrup Franc. 200 dozen made. It’s varietal and crisp, boysenberry, redcurrant, raspberry, a smattering of blonde tobacco, aniseed and herb. Medium-bodied, fresh red fruits, red cherry in particular, a savoury tobacco edge again, a semi-dried tomato pesto thing, fine dusty tannin, with a dry and crunchy finish of good length. Nice wine.”
