From a vineyard on the sea side of Caves Road, Wilyabrup opposite Cullen. Close planted in the mid 80s at double normal density.
Wild fermented with cloudy juice in old barrels (>5 yo, so no oak flavour or tannin impact. Just a good vessel for lees/wine interplay) we fermented a quarter of this wine in an open fermenter (omni bin) on its skins (like a red wine) for a bit over a week. This results in heaps of skin texture & grip plus some pretty funky flavours. Half the barrels went through malolactic fermentation. Six months in oak. No acid additions, no fining & no filtration for this wine. Textural, long & complex.
